Barbecue Pie

Today was my Friday (yes, I'm bragging! Lol) and I really didn't want to cook dinner. Typically when this happens, I end up 'inventing' some kind of meal with only the ingredients I have on hand, and using up most of our leftovers. My boys said this creation was like (and I quote) a little slice of heaven. And when all my guys like something I've made, I simply cannot help but be excited and want to share! Hope you all like!


Barbecue Pie

Leftover BBQ Pork (It was about 1-2lbs. It was initially cooked all day in a croc then shredded and BBQ sauce was added. We ate it on buns with homemade coleslaw, all compliments my mom)
Leftover corn (It was about 1 cup. This was fresh/frozen corn)
Corn Bread (I made my own using the recipe on the back of the box but you can use the 'just add water' stuff. Make one serving)
Shredded Cheese (I used about a handful and a 1/2)
Honey

Preheat oven to 350




In a baking dish combine BBQ pork, Corn, and sprinkle with a 1/4 of the cheese.




Make your corn bread mix according to package. Add the rest of the cheese to the mix.
 
 
 

Pour cornbread-cheese mixture over the pork-corn mixture, then drizzle with honey.
Cook for 40-45 mins till middle is done and top is golden.

 
 
 
Serve like pie. Drizzle a little more honey on top and a little (or a lot)
of your favorite hot sauce. I used Sriracha.
