Being the momma of these hard working body builders, I naturally have to make us some things we can add the title of Body Builder to! Here is the first of many (ha!) recipes that I wanted to share with you all!
Body Builder Egg Salad
12 Hard Boiled Eggs
1/2 Sweet Onion Minced
5-6 Baby Carrots Minced
1/2 Large Jalapeno (or 1 small one) Minced
1/2 tsp Sea Salt
1/2 tsp Paprika
1 tsp Dried Mustard
2 Tb Parsley
Pinch of Red Pepper Flakes
1/2 cup of Best Foods with Olive Oil
Boil Eggs for 20-25 mins Remove from heat, drain hot water, let rest while you prepare the other ingredients |
My secret to a mince (because I'm not that great with a knife) is:
I shred all my veggies first then mince them
with a big knife, chopping till the 'veg' is finely minced
Combine all the spices in a small bowl then
pour over veggie mixture -mix together
Peal eggs (I do this into the pan so I have one trash run)
Finely chop the eggs then combine with spice/veggie mixture.
Add Best Foods and mix till all ingredients are evenly distributed |
Serve on whole grain or wheat bread. For ultimate flavor let the egg salad chill over night! Enjoy! |
