Body Bulider Egg Salad

My guys and I have decided to give this: "Be transformed by the renewing of your minds", positive thinking, cognitive restructuring business an ultimate test! In plain English, we are going to think ourselves to where we want to be. We all decided that health is important to us, and we think body builders are obviously healthy....SO.....we are now calling ourselves body builders! Hilarious? I know! But hey, we are laughing and working it out together. It has been quite a comically time in our home as you may guess. Here are some of the things you will hear said often around our house now: "Body builders don't eat that!" "Body Builder Mom can you pick me up from school after practice?" Body Builder Dad can I use the your weights?" "Body Builder Son, get your homework done!" Lol!! Not to mention you'll find random acts of  lifting weights, sit ups, push ups, wall sits, running in place, jump roping all day long! Lol!! When we do something, we do it all the way people!

Being the momma of these hard working body builders, I naturally have to make us some things we can add the title of Body Builder to! Here is the first of many (ha!) recipes that I wanted to share with you all!
 
Body Builder Egg Salad
 

12 Hard Boiled Eggs
1/2 Sweet Onion Minced
5-6 Baby Carrots Minced
1/2 Large Jalapeno (or 1 small one) Minced
1/2 tsp Sea Salt
1/2 tsp Paprika
   1 tsp Dried Mustard
   2 Tb Parsley
Pinch of Red Pepper Flakes
1/2 cup of Best Foods with Olive Oil



Boil Eggs for 20-25 mins
Remove from heat, drain hot water,
let rest while you prepare the other ingredients




My secret to a mince (because I'm not that great with a knife) is:
I shred all my veggies first then mince them
with a big knife, chopping till the 'veg' is finely minced
 
 

Combine all the spices in a small bowl then
pour over veggie mixture -mix together


Peal eggs (I do this into the pan so I have one trash run)
Finely chop the eggs then combine with spice/veggie mixture.
 
 
 
 
Add Best Foods and mix till all ingredients are evenly distributed
 
 

Serve on whole grain or wheat bread.
For ultimate flavor let the egg salad chill over night!
