Oriental Coconut Chicken
2 packages of drumsticks
1/4 cup of Soy Sauce
1/4 cup of Coconut Milk
1 Tb. of Water
1 tsp. Ground Ginger
2 Tb. Olive oil
2 Tb. Brown Sugar (or Sucanant or Honey)
2 Garlic Cloves minced
1/2 Tb. Thyme
Pinch Red Pepper Flakes
Pepper to taste
Combine all Ingredients (except chicken) in a bowl Mix Well |
Coat pan with oil or spray Add Chicken Salt and Pepper both sides. |
Braise both sides of Chicken
Add well mixed sauce
Cover and simmer on MEDIUM for 15-20 mins
or until chicken is completely cooked
'Shake' pan around and flip sticks
occasionally to coat in the sauce.
Coconut Cream Rice
1 can of Light Coconut Cream1-1/2 cups of water
2 cups of rice (I use a blend of white and brown)
Add entire can of milk and water to pan. Burner should be on HIGH. |
Add rice mixture to milk and water mixture. Bring to a hard boil. Reduce heat to LOW! Cover with lid. |
Cook on LOW for 25-30 mins Toss rice with fork when done. |
Sauteed Green Beans
1/2 medium Sweet Onion
1 bag of Frozen Green Beans
2 Tb. Olive Oil
Salt
Pepper
Slice Onions
Saute in Olive oil over MEDIUM heat till tender and browned |
Add Frozen Green Beans to pan. |
Stir to coat with onion and oil. Cover and cook on MEDIUM till green beans are bright green and tender. Stir occasionally to coat greens in onion and oil. |
