Summer Salsa

Spice up your summer with some fresh salsa! I try to have a fresh batch in my frig all summer long. It is great for a quick snack or an addition to a Mexican lunch or dinner or adds a burst of flavor to a morning omelet --the possibilities are endless. Low in calories and packed full of health benefits, you cannot go wrong with this scrumptious condiment.

Summer Salsa

1 bag of Roma Tomatoes
1 bunch of Cilantro
3-6 Jalapenos
1 Sweet Onion
1 Lemon
2-4 Cloves of Garlic
1-2 cans Diced, Crushed, Tomatoes or Tomato Sauce
Salt
Pepper
Paprika
Cumin
Chili Powder
Cayenne Pepper

Wash all your veggies thoroughly
Quarter onion

Get your spices ready
Open can of Tomatoes

Place Onion, Halved Jalapenos (Remove tops),
Garlic Cloves, and Lemon Juice in Ninja
(or food processor or blender)
Finely Blend
(Note: I do not remove the seeds from the jalapenos but feel free to, if you want.
Also Juice lemon into a separate bowl then clean out seeds before you add to the Ninja)

Pour into large container

Add Cilantro and canned Tomatoes to Ninja
Add approx. 1 Tbs. of Paprika, Chili Powder,
Cumin, Salt, and Pepper.
Add 1 Tsp. of Cayenne Pepper
Finely Blend
(Note: I add canned tomato for two reasons.
1) It adds a level of sweetness that I cannot get when tomatoes are out of season and
2) It bulks up my batch when my cash flow is challenged. Lol!)
 
Pour into large container

Halve Roma's
Deseed by lightly squeezing tomatoes
into a bowl or the sink.
(Note: This will help to thicken the salsa by eliminating a bulk of the tomatoes 'water' content)

Place in Ninja
Chopped to desired consistence.
Less pulses for bigger pieces and more for smaller pieces.

Pour into large container
Mix together well

Taste Test!!
You will most likely have to add more salt!
It should be sweet but spicy.

Note: If you happen to get some peppers that are kickin' crazy hot, and no one can eat the salsa because it is toxic.....Peel and core 2 apples (any kind) put in Ninja with another can of tomatoes and blend well. Stir into the salsa and add salt to taste. The sweetness from the apples and the canned tomatoes should balance the heat so that your salsa is edible!
