Hawaiian BBQ Chicken

This is a new twist to an old ingredient! You can leave the chicken whole and serve with rice or any summer side, like broccoli salad. Or add to a veggie stir-fry. Or you can shred and stuff it into your favorite roll! It's easy-peasy and yummy to your tummy!

Hawaiian BBQ Chicken


1 lb. Chicken Breast
1 lb. Chicken Thigh
2 cups or 1 bottle BBQ Sauce
1 cup Pineapple Juice
1 Red Onion -Diced
2 Poblano Peppers -Diced
Salt
Pepper




Dice Onion and Peppers

Add Chicken Thighs to bottom of Slow Cooker
Salt and Pepper meat
Add a layer of Peppers

Add a layer of Onion

Add a layer of BBQ Sauce

Add Chicken Breast
(I mix white and dark to ensure that my chicken
will be tender and juice --no dryness!
The dark meat helps keep everything moist!)

Repeat Layering
Salt and Pepper
Peppers
Onion
BBQ Sauce

 

Add all the juice from the Pineapple
Grill Pineapple for sammies
or add as a healthy side to your dish
or put out for your kids to snack on
 
Cook for 4-6 hrs. on low or 6-8 hrs. on high
 
 
Stuff Sammy with Shredded Chicken
Grilled Pineapple and Coleslaw!
